Easy Homemade Spinach Pasta
Looking for a fun activity or just a new recipe to try? We love homemade pasta because it’s fun to make and tastes so much better. This time around, we added fresh spinach to the pasta for a colorful look and a tasty and nutritious addition. The ingredients are simple, and you don’t need many tools.
INSTRUCTIONS:
Combine flour and eggs by hand or with a food processor/stand mixer (both methods are shown in the video).
Blanch spinach in boiling water for one minute.
Add spinach to the food processor and mix. Add in dough/flour, eggs, and salt.
Mix until all ingredients combine and form a dough ball.
If too sticky, add more flour. If too dry, add a few drops of water.
Take out the dough ball and let it sit for 20-30 minutes. (This is a great time to grate your cheese, roast some tomatoes, and prep your protein add-in.)
Place the dough ball on a mat with extra flour and roll flat. (If you have a pasta cutter, as shown in the video, this is where you can roll out your dough even more and cut your pasta. If you don’t have a pasta machine, simply fold up the thinly rolled-out dough like you would a piece of paper multiple times and use a knife to cut your pasta.)
Add freshly cut pasta to boiling salted water for a few minutes. Fresh pasta cooks quickly, so check often! In the video, we cook thicker noodles, which require more time than spaghetti.
Drain the pasta and add olive oil. Then, add your toppings (we used grated Asiago and Parmesan, basil, and lemon juice).
